Freshman Roommates

OK, here is a quick lunch recap before I get to my roommates…. I had chicken avocado egg salad on a bed of spinach and it was very refreshing.

Ingredients: 

  • 1.5 ripe avacados
  • 4-5 oz. shredded chicken breast
  • 3 hard boiled eggs
  • 1/4 cup shredded carrots
  • 1/8 cup chopped onion

All I did was slice the hard boiled eggs and combine everything in a bowl with some salt and pepper! The avocado replaced the mayo and gave the chicken egg salad a fresh green color. This is absolutely my new favorite chicken salad! Looking forward to leftovers for dinner :)!

One of the scariest, sometimes dreaded but potentially best aspects about going off to college is meeting your new roommate. I had several roommates throughout college years, but my freshman year was probably the most intimidating time for me. I experienced meeting new roommates twice in just one year.

My first semester I had signed to play college softball at the University of Central Arkansas where me and three other freshman softball players met and lived across the hall from one another (two to a room). I learned a lot about myself and the joys of college life as we bonded with open doors, dance parties and late night licorice feasts.  Mady, Courtney and Ashley were all from California so it was fun to compare our Texas and Cali homes to the quite town of Conway, Arkansas.

This was Halloween exactly 5 years ago.

Then, over Christmas break,I made one of the hardest decisions of my life and decided to transfer to Midwestern State University in Wichita Falls, TX.  I wasn’t able to say goodbye to my UCA roommates and felt terrible about the whole situation, but I knew deep down I had to transfer. It was also a battle with my pride because I was being pulled back to a school I had previously declined, and I wanted to stand firm on my first decision (even though I knew I needed to be in Wichita Falls).

Well, all that aside, I was able to complete the transfer to play softball at MSU, relatively smoothly. I also was assigned yet another new roommate. Coming into the softball program in the middle of the year was not easy. All the girls knew each other and had formed relationships, so the first couple weeks were rough especially with my reserved and shy personality. Also, the dorm life at MSU was very much different from dorm life at UCA. It was a lot quieter and the doors were designed to always be closed where at UCA I was used to leaving our doors open for easy socializing with neighbors. Luckily I had a super friendly, bubbly girl to live on the 6th floor with.

She ended up transferring the next year after experiencing a traumatic ankle injury that equipped her with some screws and frustration. We continued to be friends and to my excitement she transferred back and we rented a house together with another new roommate, Alyssa AKA Snail. Living with these girls has given me some of my best memories and a couple of amazing friendships filled with vacations, road trips, weddings, and babies!

This past weekend Alyssa and I traveled down south to visit Miranda.

We went to the Mushroom festival where Alyssa’s husband Matthew sampled some fried mushrooms (this picture was actually an accident, but now you get to see the fried mushrooms!).

On Sunday Miranda began to have contractions so we were able to rush her to the hospital! We were able to hang out with her for a bit before heading back to Wichita Falls. It was so hard to leave…

She stayed overnight and the next day welcome two beautiful boys into our lives! They are named Brynt Alston and Bryce Allen.

Now I am off to run a good 5 miler before my work meeting tonight! Wish me luck!
